Meat Free Monday: Heart of Palm Salad

At the risk of sounding like lover of pretentious vegetables, the heart of palm takes a clear second place on my list of favorite veggies, succeeding the artichoke of course. Harvested from real palm trees (a common question), the heart of palm is a bit costly due to the labor intensive harvest process and the fact that doing so actually kills the poor tree. More of a tree hugger than a killer myself, this makes me feel a bit guilty but once the salty yet subtly sweet and tangy taste tackles my taste buds all seems forgiven. Cake Balls. Who Knew?

I’ve recently discovered something magical. CAKE BALLS. Have you had them? They’re ah-mazing. To be quite honest, I’m not sure how I’ve spent the last several decades being completely unaware of their existence. Perhaps it was my punishment for not being a big ‘dessert person’ – I don’t know. Either way, I’m thrilled to know about them now. If you’re not familiar with cake balls, they’re exactly what they sound like. Little balls of cake mixed with frosting and then covered in chocolate. Mama Knows Corned Beef and The Joy of Cooking

I may have mentioned once or twice that my mom is a wonderful cook, particularly when it comes to holiday feasts. One of her specialties is corned beef, which I’ve never really been a fan of but suddenly had a hankering for when I realized it was St. Patrick’s day. This was sometime around noon. I promptly jumped on Twitter and asked my local butcher to help me out. (What? Cilantro Confessions

I have a confession to make. While Beau and I were on vacation in Ixtapa, I ate cilantro. Quite a bit of it actually – the guilt and disgust has been weighing on my conscience ever since. For all the smack I talk about the stuff, I feel as if I should come clean about this. Now, please don’t get it twisted I AM STILL NOT A FAN OF CILANTRO – I managed to tastefully pick the larger leaves out of every bit of food it had infested.
